INGREDIENTS:
(FOR SLAW)
-1 SMALL HEAD RED & GREEN CABBAGE (2 CUPS OF EACH, SHREDDED FINELY)
-1/2 SMALL RED ONION, DICED
-1 JALAPENO (DESEEDED & DICED)
-1/2 CUP SLICED BREAD & BUTTER PICKLES + 1/2 CUP PICKLE JUICE
(FOR SAUCE)
-1 CLOVE GARLIC, MINCED
-1 CUP RANCH DRESSING
-2 TO 4 TABLESPOONS (DEPENDING ON DESIRED HEAT) HOT SAUCE
(FOR CHICKEN)
-BONELESS SKINLESS CHICKEN BREASTS (HALVED CROSSWISE)
-FLOUR
-BUTTERMILK
-SALT/PEPPER
-OIL FOR FRYING
-SANDWICH BUNS
INSTRUCTIONS:
(FOR SLAW AND SAUCE)
1. Mix ranch dressing, minced garlic and hot sauce together. Set aside.
2. Combine both red and green cabbage, onion, jalapeƱo and pickle juice. Cover and refrigerate.
(FOR CHICKEN)
1. Pour oil into a deep pot (like one you'd use to boil pasta) and heat to 350 degrees. This is when a deep fry thermometer comes in handy. If you don't have one, get one! otherwise you can check the oil buy dropping tiny pieces of flour and seeing if it dances (AKA sizzles around)
2. Put 2 cups of flour into a bowl and season with salt and pepper. Pour 2 cups of buttermilk into another bowl. Doing one piece of chicken at a time, dredge in flour (shake off excess) then into buttermilk, back into flour. Coating completely.
3. Fry chicken until dark golden brown (you'll want a deep color to ensure its cooked all the way through. Flour has a tendency to make fried meat look like it's done even if it's not). About 7-8 minutes. Check internal temperature of chicken is at 165 when pulled out.
4. Finish with salt when chicken is still hot. Top with sliced pickles and slaw.
TIP: lightly brush your sandwich buns with melted butter and throw them under the broiler on low for a few minutes (MAKE SURE TO WATCH THEM- or they'll burn) to add a little buttery crispness to them.
Side note: DON'T panic if you check your chicken and it doesn't appear done to you. All chicken breasts are different sizes and thicknesses and frying time can always vary. If you find that your chicken is not cooked all the way through, pop it in the over at 400 degrees to finish the cooking process.
