CHEESY CHICKEN CRESCENT ROLL BAKE

I am absolutely obsessed with this super easy and delicious chicken crescent roll bake. It has SO much flavor and is so comforting. This recipe makes a lot of roll ups and fills an entire 9x13 baking dish. We had a lot of left overs. If you'd like to make less you can split this recipe right in half! INGREDIENTS: -2 tubes of 8 count regular sized crescent rolls (16 count total) -4 cups cooked chicken breast (I used rotisserie meat from 2 birds), shredded -8oz cream cheese, room temperature -One 8oz bag Kraft shredded jalapeƱo cheese -2 tsp dried instant minced onion (you can substitute with onion powder) -1/2 tsp garlic powder -Salt/Pepper -2 small can cream of chicken soup -1 soup can full of milk (use the empty soup can to measure) INSTRUCTIONS: 1. PASTA BOLOGNESE

INGREDIENTS: -6 ounces Pancetta, chopped -1 lb ground pork -1 lb lean ground beef -1 medium yellow onion, chopped -2 large carrots, chopped -2 stalks celery, chopped -8 cloves garlic, minced -28 ounces canned tomatoes (I used San Marzano) -4 tbsp butter -2 tbsp olive oil -1 cup milk -1 cup beef broth -1 cup white wine -Freshly grated parmesan cheese -Salt/pepper -Pasta of choice (I used fresh fettuccine from Whole Foods) INSTRUCTIONS: 1. In a large skillet, melt 2 tbsp butter & 1 tbsp olive oil together. Add pancetta, pork & beef. Break apart as it cooks & season with salt & pepper. Cook meat over medium-high heat until almost all of the liquid from the meat is absorbed, breaking apart constantly. Continue this until meat gets very brown (about 20-25 minutes). CROCK-POT CHICKEN TOSTADAS WITH GUAC & CILANTRO LIME CREMA

INGREDIENTS: For chicken:  - 4-5 boneless chicken breasts - 1 packet taco seasoning - Ground cumin - Trader Joe's chili lime seasoning (if you don't have this you can skip) - Red salsa - Green salsa - Premade tostada shells (found in the Spanish aisle of the grocery store) For guac: (optional) - 3 avocados - 1/2 tomato, diced - 1 jalapeƱo, diced - 1 handful cilantro, chopped - 1/2 small white onion, chopped - Juice of 1-2 limes - 1 tbsp garlic powder - Salt/pepper For crema: - 1 cup plain non-fat greek yogurt - Juice of 1 lime - Small handful cilantro - Salt/pepper Toppings: You can top these with anything you'd like!! I used shredded lettuce, left over pieces of tomato, cilantro & crumbled queso fresco. NOTE*** If you want to skip making homemade guac you can easily purchase premade. BUCATINI CACIO E PEPE

INGREDIENTS: -1 lb Bucatini pasta -5 tbsp butter (divided) -1 tbsp freshly cracked black pepper, plus more for topping -1 cup freshly grated pecorino romano, plus more for topping  -1 cup freshly grated parmesan, plus more topping -4 tbsp olive oil -2 cups reserved pasta water (cooking water) *Optional: shaved parmesan Truffle salt INSTRUCTIONS: 1. Bring a large pot of salted water to a boil. Add pasta & follow box instructions for al dente (about 8-9 minutes depending on the brand). Pasta will continue to cook later in the sauce. 2. Before draining the pasta, scoop out 2 cups of cooking water & place into a small bowl. Drain pasta & set aside. In a large skillet melt 4 tbsp of butter, 4 tbsp olive oil & 1 tbsp pepper until butter is melted. Add in pasta, 1 cup of pasta water & both cups of parmesan & pecorino cheese. GREEK CHICKEN WITH LEMON FETA POTATOES

INGREDIENTS: -2 Boneless skinless chicken breasts  -6 Yukon gold potatoes -2 Roma tomatoes, chopped -1/4 Cup crumbled Feta cheese -1 Large lemon -1 Clove garlic, minced -1 medium shallot, diced -1/2 Cup plain greek yogurt -Garlic powder  -Greek seasoning (any premade from the spice aisle of the grocery store) -Salt/Pepper -4 Tbsp Olive oil INSTRUCTIONS: 1. Preheat oven to 425. Cut potatoes in quarters & toss in 2 tbsp olive oil. Place on a nonstick baking sheet. Season generously with salt, pepper & sprinkle with garlic powder. Bake for 25-30 minutes, or until they are fork tender. Tossing once halfway through. 2. When the potatoes have about 10 minutes left, start the chicken. Cut the chicken into 1 inch pieces & toss in greek seasoning, salt & pepper. Heat a skillet with 2 tbsp olive oil over medium high heat. Add in shallots & garlic clove, cook for 1 minute. HALIBUT PICCATA WITH BROCCOLINI & GARLIC BUTTER MUSHROOMS

INGREDIENTS: -2 halibut filets -1 package of broccolini -2 small containers of baby bella mushrooms -1/4 cup flour (you can use any type of flour you'd like) -4 cloves garlic, minced -1/2 stick butter + 1 tbsp -3 tbsp olive oil -2 tbsp garlic powder  -Salt/pepper FOR CREAM SAUCE: -1 tbsp butter -3/4 dry white wine (I used Aldi Pinot Grigio) -3/4 cup chicken broth -1/4 cup lemon juice (about 3 large lemons) -1/2 cup heavy cream -2 tbsp of corn starch -4 tbsp capers  NOTE: I used a preheated cast iron skillet to roast these mushrooms. It gives them a nice browned bottom but if you do not have one you can make them in any oven-safe pan or dish. *** If you do have a cast iron skillet, put it in the oven and preheat to 400 degrees. CROCKPOT CHICKEN FAJITA BOWLS

INGREDIENTS: - 2 lbs boneless chicken breasts (about 4-6 depending on size. I used 6 medium sized) - Two 10oz cans diced tomatoes with green chilies - 1 red pepper - 1 green pepper - 1 yellow pepper - 1 orange pepper - 1 large white onion - 2 packets of fajita seasoning - 1 tsp garlic powder - salt/pepper *OPTIONAL* 2 jalapeƱos (without seeds) diced small - I like this a little spicy but you can definitely leave them out. Avocado for topping INSTRUCTIONS: 1. Grease your crock pot with non-stick cooking spray. Layer 1 can of diced tomatoes on the bottom of the pot. Slice (julienne) all peppers & onion. Layer half of mixed peppers on top of diced tomatoes. Top with half of sliced onion. Sprinkle onions with garlic powder. 2. Season both sides of chicken breasts with fajita seasoning. I used about 1 1/2 packets, but you can adjust this depending on how strong you want the flavors to be. But I suggest at least 1 1/2 packets. Layer chicken ...
