INGREDIENTS:
-1 head cauliflower, chopped into florets
-1 can of condensed cheddar soup
-One 5oz can evaporated milk
-3 tbsp white onion, chopped small
-2 cups shredded cheddar cheese (I used sharp cheddar)
-1 tsp salt
-1/2 tsp paprika
-1/2 tsp pepper
-Green onions for garnish (optional)
INSTRUCTIONS:
1. Coat the inside of a crock pot with non-stick cooking spray. Place cauliflower florets & chopped onion in the bottom of the pot.
2. In a medium sauce pan, heat cheddar soup, evaporated milk, paprika, salt & pepper over medium heat. Once combined, mix in shredded cheese until melted. Pour over the cauliflower & onions and mix together.
3. Cook on low for 3 1/2 hours. Stirring occasionally. Top with cracked pepper and green onions.
