INGREDIENTS:
-1 lb raw peeled & deveined shrimp
-2 tbsp olive oil
-Emeril's blackened seasoning
-1 package Trader Joe's "truly handmade" tortillas (or any tortillas you'd like)
-1 package Trader Joe's coleslaw kit
-1 avocado
-3-4 spoonfuls sour cream
-2 limes
-1 bunch cilantro (leaves chopped)
-1 jalapeño diced (seeds removed)
-1 tsp garlic powder
-1 bag Trader Joe's fire roasted corn (found in the freezer section)
-Salt/pepper
-Wood or metal skewers
TIP: I buy Trader Joe's "organic coleslaw kit" for the slaw used in this recipe because I love that it's already chopped & ready to use in the perfect portion. Whenever I made my own in the past I'd always end up with a TON of extra red & green cabbage that ultimately went to waste in the fridge. But, I DO NOT use the packet of coleslaw dressing that comes in the bag for this. And for $1.69 a bag it's so worth it to buy just the right amount of slaw that you will need instead of buying 2 giant heads of cabbage. (I've tried to leave left overs out for the squirrels before & they were not fans)
INSTRUCTIONS:
1. Before cooking, soak wood skewers in water for at least 30 minutes so they don't burn. Coat shrimp with 2 tbsp olive oil & season with blackened seasoning to your liking. Skewer shrimp (about 5-6 per stick) & set aside.
2. For the slaw, empty contents of the bag into a large bowl (again do not use the dressing that comes in the bag). Mix 3 spoonfuls of sour cream into the slaw along with juice from 1 lime, 1/3 cup chopped cilantro, chopped jalapeño, garlic powder & salt/pepper to taste. If you find the slaw is too dry, add another spoonful of sour cream.
3. Cook corn according to package directions. (Heating a skillet with non-stick spray & cooking on medium high heat for about 5-7 minutes)
3. Grill shrimp for about 3 minutes on each side until no longer opaque.
4. To plate: warm tortillas in paper towels in the microwave for 20 seconds. Layer slaw, grilled shrimp & corn. Garnish with more cilantro, avocado slices & fresh lime wedges. Fresh lime juice on the top is key :)
